4 large eggs 1 pound ricotta cheese 1 cup sugar 1 teaspoon anise extract 1 cup cooked white rice 4 tablespoons anisette liquor (optional) In a mixing bowl, beat the eggs and sugar. Stir in ricotta cheese, rice and anise extract. Pour into 7x11 inch pain and bake 450 degrees for 15 minutes. Lower oven temperature to 300 degrees and bake an additional 30 to 40 minutes until knife inserted in middle comes out clean. Remove from oven. Optional: While still warm use a fork to make several holes on top of the pie and pour on the anisette liquor. Cool pie before serving. Cut into squares. Refrigerate and serve chilled. |
