Potato Candy

1/2 cup boiled and mashed potato
2 lb confectioner's sugar (approximate)
1 lb coconut (approximate)
peanut butter
chocolate chips or chocolate bar or your own chocolate frosting

Add 2 cups confectioner's sugar to a boiled and mashed potato (can be hot or cold). Add 1 cup flaked coconut. Mix with a fork, or knead with hands. Keep adding more sugar and coconut in a 2:1 ratio until the dough is easy to handle (not too sticky or soft). Depending on how wet the potato is, the amount of sugar and coconut will vary. When the dough is easy to handle, roll out in a rectangle shape on a sugared board about 1/4 inch thick, spreading the conf sugar both on top and bottom of the dough to keep it from sticking to the table or the rolling pin. Spread peanut butter over the top of the dough. Roll the dough up jelly roll style, wrap in plastic wrap and refrigerate to set (about 2 hours). Once it is set, slice into 1/2 inch slices with a sharp knife. Then melt chocolate over low heat in a saucepan. Spread chocolate over the top of each candy.
